I've gone BaNaNas!

So, when I'm feeling bored (which is always), BAKING is one thing that will surely snap me out of it. I love it! It's the perfect "Type A" activity because not only is everything done with precise measurements, but it also will occupy you for at least 45 minutes. Baking is a pleasure because you follow instructions and get (almost) instant gratification.

Nonetheless, yesterday afternoon I decided to use up my blackened bananas. Do y'all throw away your bananas when they start to turn?? If so, change your habit & save your $$. Unpeel the bananas, wrap them up individually in plasticwrap, and freeze! This way, you'll always have bananas for breads or smoothies.
I don't remember where I found this recipe recently but it turned out perfectly!


Want some?? Ok, here's what you'll need:

3 ripe bananas (the riper, the sweeter)
1/4 cup canola oil
1/4 cup crushed pineapple, drained
1/2 cup sugar
2 cups flour (I used 1 cup white & 1 cup wheat)
1 tsp cinnamon
1 tsp baking soda
Pinch of salt
1/2 cup shredded coconut

What to do:
1. Preheat your oven to 350F
2. Spray your loaf pan
3. Put bananas into a large bowl

4. and MASH

5. Add in the sugar, pineapple, and oil. Using a wooden spoon, stir until just combined.

6. In a medium bowl, sift together the flours,cinnamon & baking soda

7. Then add the flour mixture into the large bowl with the bananas.

Add in the coconut & stir with a wooden spoon until everything is just combined. OVERstirring can cause whatever you're baking to become stiff.


Once everything is incorporated, pour into your prepared loaf pan & pop into the oven for 45 minutes.




The top should be golden & a toothpick inserted in the middle should come out clean.



This is such an easy & healthy recipe for something that can be used as a breakfast to go or even a dessert with some coffee (AND it's vegan!). I hope you try this out soon. At the very least, it will fill your kitchen with amazing scents. Let me know what you think!!

  1. Your first paragraph about why baking is good for Type A personalities is DEAD on! It's why I love to bake! Also, I found Starbucks' recipe for their banana bread and its really good and also pretty healthy since it doesn't use any oil! Let me know if you want it!
